Helge Straub-Schilling loves the interplay of texture and flavour.

He combines his passion for regional cuisine with the basics of French cookery and interprets them in his own modern way.

His professional culinary journey began at the renowned “Ente” restaurant at the Hotel Nassauer Hof in Wiesbaden, which has a Michelin star and 17 points in the Gault Millau Guide. There he gained half a decade of valuable experience as Commis de Cuisine and later rose to Chef de Partie.

After a year as Chef de Partie at the Michelin-starred “top air” in Stuttgart, Helge continued his career at the restaurant “Ammolite-The Lighthouse” in Rust, which has been awarded 2 Michelin stars and 18 points in the Gault-Millau Guide.
Here he honed his skills as chef de partie.

Most recently, Helge Straub-Schilling spent 2 years at the restaurant “Steins Traube” in Mainz, which has a Michelin star, as head chef.
